INTRODUCING ADM’S NEXT GENERATION OF MEAT ANALOGUES
ADM has launched an exciting new range of meat analogues
under the brand name NutriSoy Next™ using extruded soya
proteins in combination with other vegetable proteins to
offer an attractive taste, flavour and ‘whole-muscle’
texture. This is part of a new generation of meat analogues
which provides a broader appeal, acceptance and use amongst
increasingly health conscious consumers.
Conventionally extruded proteins usually have moisture
levels of 30% or less. However, ADM uses a proprietary high
moisture extrusion process which gives NutriSoy Next meat
alternatives their tender, succulent texture and locks in
the flavour. By adjusting the processing conditions during
manufacture, ADM can offer a range of tailor-made products
with varying textures, flavour profiles, shapes and sizes.
With a taste and bite that can closely simulate cooked,
whole-muscle meat, and a tender texture which allows the
fibres to flake with a fork, Nutrisoy Next ingredients can
easily be incorporated into existing recipes to replace
meat, with no additional preparation. The products,
currently made at ADM’s Haldane Foods’ 100% meat-free plant
in the UK, are Individually Quick Frozen (IQF) for
convenience of use.
In the UK, foods formulated with ADM’s NutriSoy Next meat
analogues can qualify to use the Joint Health Claims
Initiative (JHCI) generic cholesterol-lowering health claim,
which states that: “The inclusion of at least 25g soya
protein per day as part of a diet low in saturated fat can
help to reduce blood cholesterol”. A typical serving of
products containing NutriSoy Next will provide more than
half the daily amount.

analogues, and has developed hundreds of product
formulations using Textured Vegetable Protein (TVP®),
soya protein concentrates, and soya protein isolates.
